Any fellow gardener knows that when summer squash season arrives, you must be prepared with recipes or risk drowning in it! We’ve tried everything from “noodles” to baked items to chips throughout the years, but this was our first foray into Zucchini Biscuits… and what a fantastic foray it was! Shredded zucchini with a sweet and nutty flavor is completely drained and combined with cheddar cheese for a savory delicacy that complements any summer dinner.
These biscuits couldn’t be easier to make, as they require no kneading or rising. Let’s start with the ingredients…For the base of the dough, you’ll find the usual baking staples: flour, baking powder, and salt. Then comes the secret to these biscuits: draining as much liquid as possible from the zucchini. Place the shredded zuc in a colander or mesh strainer and liberally salt it to promote draining. After 15 minutes, rinse out the salted zucchini with a clean dish towel or paper towel.
To give these biscuits a little spice, we added garlic, red pepper, and chopped green onion. Feel free to change the spices to your liking. A drop biscuit requires little shaping; simply scoop the dough and place it on a parchment-lined baking sheet. Bake them for about 25 minutes, and your Zucchini Drop Biscuits are ready to eat!
