How To Make Johnny Cash’s Pineapple Pie

Okay, so this isn’t exactly Johnny Cash’s recipe, but it was his mother’s, and it was said to be one of his favorite foods. If it’s good enough for Johnny, it’s good enough for us, but it’s more than good enough – it’s a simple, charmingly southern pie that uses pineapple directly. That is the point of this pie. That, and a little sugar. Aside from the pie crust, there are only six simple ingredients in this pie.

There’s sugar and pineapple, butter and eggs, flour and vanilla extract… So it’s actually just some baking essentials and canned pineapple. Everything is mixed together in the same bowl and poured into the pie shell, so it doesn’t get any easier than that. It will appear liquid and as if it will never hold up, but trust that it will.

It bakes for approximately 50 minutes, and while it will be a little jiggly at the end, the time helps it stay together well and changes the top into a gorgeous golden, sugary crust. It’s a traditional pie, unrepentant in its sweetness and simplicity. It’s simple to see why Johnny liked it; it’s the kind of pie that you fall in love with after just one mouthful.
