Is bark the simplest homemade candy available? If not, this Pecan Pie Bark very surely is. See, it starts with graham crackers and only five more ingredients to make an oven-baked bark with plenty of crunch. When I say easy, I mean 10 minutes of prep time and ten minutes of baking time, with no candy thermometer required. It has the sticky sweetness of Pecan Pie but in a more portable hand-held shape, which is great because you won’t want this bark to leave your sight.
Most bark I’ve seen has a chocolate base that sets up till it’s nice and breakable, but this bark is unique in that it starts with entire graham crackers. You totally cover a baking sheet with them… … and then in a saucepan, add the butter, brown sugar, pecans, and salt. You bring it to a boil for just long enough for it to melt and combine……Then you pour everything over the graham crackers.
It goes into the oven for 10 minutes, which is enough time for some of the mixture to sink in and soften the crackers while also allowing the sugar mixture to set up into more of a candy crack as it cools. It’s the kind of crunchy and sweet delicacy that’s easy to prepare for gifts during the frantic holiday season, but honestly, I adore making it on the most mundane of days – the sweet candy snap and nutty crunch will make any day a little more interesting.
