Buckeye Brownie Cookies

If you’ve never had a buckeye, you’ve probably never traveled to the Midwest. These peanut butter fudge candies dipped in chocolate are extremely popular in Ohio, although they are available in several nearby states as well. This is the treat for you if you like peanut butter and chocolate! Even those who claim to dislike this iconic combination fall in love with these cookies.

This recipe is simplified by starting with a boxed brownie mix. With just a few ingredients, you’ll have a cookie that’s perfectly dense yet nearly creamy in texture. We’re in business with a dollop of 2-ingredient peanut butter fudge and some melted chocolate chips! This recipe, as previously indicated, begins with a package of fudge brownie mix. Stir in the vanilla, cornstarch, butter, softened cream cheese, and one egg until well mixed. The dough will be sticky, which is precisely what we want!

Place the brownie cookies in the oven for 10-12 minutes. Meanwhile, in a mixing dish, combine the peanut butter and powdered sugar. Make 1-inch balls out of the mixture (one for each cookie). As soon as the cookies come out of the oven, lightly press a peanut butter ball into the center of each. The peanut butter mixture will slightly soften. Allow to cool for 5 minutes before transferring to a wire rack.

The final step is to microwave the chocolate chips and coat the peanut butter ball. These cookies are simple to prepare and delicious! If you’re craving a buckeye, these will definitely satisfy.
