No Bake Chocolate Oat Bars

These oat bars were similar to a more chocolatey and delicious granola bar, so everyone enjoyed them. This delicious treat consisted of layers of oats and chocolate, topped with a drizzle of even more chocolate. What is the best part?

There is NO BAKING involved!! Not only are these ideal for the summer, but they’re also fantastic all year round and may give you the taste of a delicious baked chocolate and oat treat without the need to prepare! Grease a 9×9 inch square pan.

Melt butter in a large pot over medium heat. Stir in the brown sugar and vanilla. Mix in the oats. Cook for 2 to 3 minutes on low heat, or until the ingredients are thoroughly combined. Place half of the mixture in the bottom of the prepared pan. Save the other half for toppings.

Meanwhile, in a small heavy saucepan, melt the chocolate chips and peanut butter over low heat, stirring constantly, until smooth. Pour the chocolate mixture over the crust in the pan, spreading it evenly with a knife or the back of a spoon.

Crumble the remaining oat mixture over the chocolate layer, pressing down lightly. Cover and refrigerate for 2-3 hours or overnight. Bring to room temperature before cutting into bars.
