Buttermilk and butter work together to create the perfect biscuit consistency. Cold butter is essential for a flaky, moist biscuit. Chunks of cold butter incorporated throughout the dough will help the biscuit maintain its buttery-crumbly texture. It’s also vital to handle the buttery dough as little as possible in order to maintain the butter pieces in the biscuits.
Cold butter and a little chill time before baking make the perfect biscuit. I’m using Irish butter to comply with the Irish theme, but you may use any unsalted butter you have on hand.I’m adding cheese and onions to these biscuits to boost their flavor. And, like the butter, I’m using Irish sharp cheddar cheese.
The sharpness of the cheese complements the peppery taste of the green scallions. Both are folded into the dough to distribute equally, ensuring that every bite of the biscuit contains taste. Just before baking, I’ll brush the biscuits with egg wash to give them a gorgeous golden crust on top.
These smell deliciously fantastic while they bake in the oven and turn out to be extremely stunning. I serve these with, you guessed it, creamy Irish butter on the side; that butter melted into a warm biscuit – who could say no?
