They’re quick — thirty minutes or less — and inexpensive — you only need tortillas, beans, salsa, cheese, and seasonings — and they couldn’t be more delicious. We’ve included stovetop and oven directions so you can cook them however you choose. They’re crispy, delicious, and ideal for the whole family.

(Or at least, my entire family adores them. I believe yours will too.)I have a habit of planning our meals around meat, but I’m trying to break it because 1) it may be expensive, 2) there are so many other protein sources available, and 3) it can get dull. Let me tell you: these Crispy Black Bean Tacos are everything but dull. The filling is zesty and meaty, with just enough cheese to feel like a treat, and it’s all wrapped up in a crunchy tortilla shell.

They’re ideal for dipping, and I enjoy them for dinner, but they also make an excellent appetizer.These work best with flour tortillas, but you can also use corn tortillas if you’re gluten-free or like the flavor. To make the filling, combine black beans, salsa, taco seasoning, and lime juice in a food processor and pulse until chopped but chunky. If you don’t have a food processor, you may use a blender; just make sure to pulse the mixture rather than liquify it! Then, on the burner, boil the black bean mixture briefly to combine the flavors and cook out some of the liquid.

You’ll spread that mixture inside each tortilla, along with a small amount of Monterey Jack cheese, and then focus on getting them crispy. The stovetop is the ideal approach for this venture; simply fry them in a skillet with olive oil for a few minutes per side until brown and crisp. You do have to take turns with each taco (or maybe two at a time), but it goes quickly and produces even, crispy results.If you want a more set-it-and-forget-it approach, bake the tortillas on a baking sheet after spraying them with oil. They’ll take approximately 10 minutes per side and still have a satisfying crunch. Enjoy!
