Cheesy Mississippi Mud Potatoes

What are Mississippi Mud Potatoes? That’s easy. They’re chopped potatoes mixed with a few other ingredients and cooked till tender, crispy on top, and completely enveloped by gooey cheese. Why are they named Mississippi Mud Potatoes? Well, I don’t really have a response to that. But you don’t have to worry about their obscure history; all you need to know is that they’re the best in soothing side dishes.

These begin with around seven cups of peeled, diced potatoes in a casserole dish, along with shredded cheddar cheese, bacon, green onion, and garlic salt. Combine all ingredients with mayo for a creamy texture. Then it bakes low and slow. They go in at 325°F, which is not too low, but low enough that the potatoes may sit for a long time till they are irresistibly tender while still having a good browned surface.

The potatoes maintain their shape, so while this is a creamy and cheesy bake, there is still plenty of texture. The bacon provides chewiness, and the green onion keeps everything from being overly rich. This is the type of side dish that works well at potlucks, weeknight dinners, and even alongside Thanksgiving turkey. It’s comfort food done correctly, so it can be enjoyed anywhere and at any time.
