Famous La Scala Chopped Salad

The Kardashians clearly enjoy salads, and this is one of their favorites. If you watched the show, you probably saw them eating this La Scala Chopped Salad. But they aren’t the only ones; La Scala, a Beverly Hills restaurant that has been open since 1956, has served this salad for decades. (It even had a viral moment on TikTok.) And that’s because it’s so amazing – two types of chopped lettuce, salty salami, creamy mozzarella, substantial garbanzos, and a vinaigrette topped with just enough parmesan that you can’t get enough of.

The salad begins with both iceberg and romaine, which is convenient because, while romaine lacks the crunch of iceberg, it also lacks flavor (and nutrition). Then there’s the aforementioned salami (julienne or cut into strips), some shredded mozzarella, and a can of garbanzo beans. It’s fairly basic, but the key is the combination of those ingredients and the dressing.Which is:

Combine dry mustard, olive oil, red wine vinegar, salt, pepper, and parmesan cheese. Again, simple yet quite tasty. If you don’t have any dry mustard, a spoonful of Dijon will suffice. (Just mix everything together; the mustard helps to emulsify!)Then throw everything together. It’s a light salad, but it tastes robust, if that makes sense.The salami and garbanzos make it feel more like a main dish than a side, but it can be used either way. It’s legendary for a reason: the crunch and saltiness, along with just the right amount of tang from the dressing, is a home run.
