Southern Sweet Potato Casserole

Thanksgiving has always been one of my favorite holidays, possibly because it focuses on all of my favorite meals (as well as Thanksgiving and family). Warm spices, root vegetables, and plenty of butter–what more could I want? While I believe the enchantment of the Thanksgiving dinner plate is the blend of many flavors, I can’t deny my fondness for sweet potato casserole.

It’s a side you rarely see the rest of the year, but on Turkey Day, it’s a must. This is my go-to recipe for it. You’ll notice straight away that this recipe does not have a coating of marshmallows. I have nothing against marshmallows, but I believe the crunchy pecan topping can hold its own without them. A generous amount of brown sugar and a dash of half and half make the sweet potato layer as rich and creamy as possible.

Place the dish in the oven for just over half an hour, then allow it to firm up before serving. This side dish pairs perfectly with cranberry sauce and a mountain of mashed potatoes. I even enjoy a bowl of it with my morning coffee (if I have any leftovers). Give this southern twist a try for the holidays; it’s sure to please everyone!
