These Cream Cheese Cookies combine basic baking ingredients with – spoiler alert – cream cheese to create a soft and practically creamy cookie that is a success any time of year, anyplace.
I prefer drop cookies, mostly because I save cut-out and rolled cookies for more important events where I can justify the effort spent on them. These do require a chilling phase, but it is only for an hour, and after the dough is hard, it is simply rolled into small balls and gently pressed down after placing them on a baking sheet. (To me, this is much easier than locating the rolling pin and cookie cutters.)
The dough is really basic. Simply mix together the butter and cream cheese before adding the granulated sugar, egg, vanilla, baking powder, flour, and other ingredients. (You know the drill.) There is only one bowl and no sophisticated processes required; only a basic cookie dough elevated with cream cheese.
The cream cheese creates a delicate and hazy texture; these are not crunchy or crisp, but rather gentle, snowy, and sweet. Because they contain both butter and cream cheese, the flavor is buttery and slightly creamy, but it is also straightforward and clean, with no nuts, baking chips, or fruit added. Simple is frequently better, and this is certainly the case with them.
