Old-Fashioned Strawberry Pie

Strawberries are certainly my favorite summer crop. Sweet, juicy, and colorful, they’re one of the season’s standouts for me. I stock up everytime I pass a farm stand, and then I have the difficult task of determining what to do with my beautiful berries. This classic strawberry pie is usually a popular choice. We have nothing against jello pies, but when working with fresh berries, you need to let them shine.

That is why this pie has only actual ingredients!For simplicity, we used a store-bought crust, but you may create your own or use a graham cracker crust. We’ve coated the baked pie shell with a small layer of white chocolate to keep it from getting mushy, a trick Grandma taught us! To make the filling, mash 2 ½ cups of fresh berries and simmer till thick and delicious. Allow the mixture to cool before stirring in the remaining fresh berries.

Transfer the filling to the cooled, prepared pie shell and chill overnight to solidify.This pie is best enjoyed chilled with a large scoop of whipped cream. Nothing like a basic homemade pie, and showcasing the season’s fresh ingredients is always a winner.
