Island Pecan Pie

Pecan pie is a family favorite all year, but it’s especially good around the holidays. It’s a Thanksgiving and Christmas mainstay, but every now and then, we like to change things up a little bit, altering things here and there, to create a unique dessert that breathes new life into a classic and surprises our hungry guests and family. We took a “island” approach and added coconut and pineapple to our pie; it was so amazing, you must try it!

The addition of coconut and pineapple, while apparently strange, was very fantastic, and our family talked about how much they like it! We had to bake ours for a little longer than usual, but it was worth it in the end. You may prepare a classic pecan pie as well, but don’t miss out on this tropical variant; it’s a game changer. Guests might like this version even more!
