One of my favorite childhood Christmas memories is creating cookie trays with my best friend and her mother. Every inch of counter space was taken up with some delectable creation, as Christmas songs played on the radio. My companion and I were usually assigned one or two recipes, followed by the decoration of the sugar cookies. Though they were dubbed “cookie trays,” they weren’t just for cookies.

In fact, these Crockpot Turtles were a fan favorite, and I’m excited to share the recipe with you!The crockpot handles the heavy lifting here, making these snacks quick and easy to make. Simply add the almond bark and chocolate chips to the crock and simmer on low until completely melted. Add the pecans or other nuts of your choice and simmer for a few more minutes.

Then it’s time to assemble.Line two muffin trays with paper cups and put a caramel square (or rolo candy) in the center of each. Scoop the silky chocolate-nut mixture over the caramel, coating everything completely. Now comes the hard part: waiting for them to set!

This can be accelerated by placing the trays in the fridge. Once the turtles are solid, remove the paper and give one a taste. I hope your family enjoys this holiday treat as much as we do.
