When roasting a turkey for Thanksgiving, always remember to remove the giblets and keep the meat moist and tender. We’ve tried a variety of roasting methods over the years, and one of our favorites is to use a roasting bag.

You’ll need a “turkey-size” roasting bag, which is relatively easy to find this time of year. A roasting bag can cook a turkey as small as eight pounds and as large as twenty-four pounds! Roasting bags have been around for a long time, and one of the reasons they’re so effective is that they help to retain moisture. Nobody wants to eat dry turkey on Thanksgiving! This also saves time for the chef because he does not have to open the oven on a regular basis to baste the turkey.
The process itself is extremely simple, and it saves time on cleanup because there is no charred roasting pan to clean at the end of each day. We can begin turkey preparation after the neck and giblets have been removed and the entire turkey has been rinsed and dried. We place onions and carrots at the bottom of the bag to serve as props for the bird while also infusing great flavor into the meat.

Next comes the seasoning mix: salt and butter are essential for a well-seasoned bird, followed by our own seasoning blend of black pepper, crushed red pepper flakes for heat, paprika, ginger, thyme, and some poultry seasoning. The bird is massaged with all of the flavors before being placed in the roasting bag to cook. Cooking times will vary depending on the size of your turkey, and you should allow the meat to rest so that the juices can be reabsorbed.
