When it comes to appetizers, my primary criterion is that they contain cheese, so when an appetizer made entirely of cheese appears, I am absolutely sold. While this Marinated Cheese Appetizer is as simple as cubing some cheese and soaking it in some herb-infused oil bliss, it elevates an already excellent dish (cheese) to something that visitors will remember long after the party is over.

As simple as an appetizer can be, it’s also about as delicious!My preferred cheese for this is mozzarella, which absorbs flavor nicely, but any hard cheese would suffice. A mild cheddar is also a great option here. Simply take one pound of cheese, cube it, and keep it in a jar or bowl. (A jar is good since it allows you to store any leftovers in the fridge for quick snacks.
Then, make your marinade by combining olive oil, parsley, sun-dried tomatoes, garlic, basil, oregano, red pepper flake, salt, and pepper. You can adjust the herbs to your liking; it’s a versatile combination. Pour it over the cubed cheese, mix to coat, and chill for two hours.During that time, the wonderful marinade permeates the cheese slightly, so when you bite in, you get not only the creamy, milky flavor of mozzarella, but also a colorful medley of herbs, garlic, and sun-dried tomato.

It’s tasty stuff. This will keep in the fridge for up to three weeks and, dare I say it, improves the longer it sits. I cannot guarantee that it will last long enough to sit in your fridge after, say, day two, because it vanishes as soon as you put it out. Enjoy!
