Depression-era chocolate cake, often known as “Crazy Cake”

If you’ve never had or heard of Depression-Era Cake, popularly known as “Crazy Cake,” you’re in for a treat today. This recipe dates back to the Great Depression, when certain components were prohibitively expensive, necessitating modifications in order to continue creating and enjoying popular foods. While most cakes are created using milk, eggs, and butter, these items were scarce in the 1930s, so people devised a method to create a rich, moist, fluffy chocolate cake.

It may appear insane, hence the name “Crazy Cake,” but this chocolate cake is just as excellent, if not better, than one filled to the brim with butter, milk, and eggs. The fact that the cake is vegan should make anyone with an egg or dairy intolerance happy, and while we used butter in our icing, you could easily use non-dairy butter to keep the entire recipe dairy-free.
