The South is known for its comfort cuisine, and few recipes are more quintessentially southern than pimento cheese. This spread, also known as Carolina caviar or southern pate, is created traditionally using pimento peppers, cheddar cheese, and mayonnaise. It is often served as a sandwich or with crackers. While I did not grow up eating pimento cheese, I have learned to enjoy its flavorful spread over the years.

I realized it would make an excellent hot dip when baked. This Baked Pimento Cheese Dip exceeded all of my expectations. The recipe uses mostly standard components, but it also includes colby jack cheese, cream cheese, and a bit of extra heat. Place the mixture in an 8×8-inch baking dish and bake for approximately 20 minutes. You’ll know it’s done when the dip starts to bubble and turns golden on top.

Serve this dip alongside your favorite chips, crackers, or toasted bread. If you enjoy the classic pimento cheese, you’ll adore this variant. Try the recipe at your next gathering and experience the magic for yourself!
