Slow Cooker Italian Summer Soup

You would think “summer” and “soup” don’t go well together. But I’m out to change your mind. This wonderful soup is loaded with fresh vegetables and savory Italian sausage, and it simmers in the slow cooker so you don’t have to stand over a hot stove all evening. Prepare everything in the cool early hours, and you’ll have a great meal ready later in the day (even if it’s hot!). You can’t beat that.

Start by browning two pounds of ground Italian sausage (hot or mild) in a large skillet over medium heat. Cook the sausage in tiny pieces until mostly browned. Remember, it will complete cooking in the slow cooker, so don’t be concerned if it isn’t fully done at this point. Drain any excess fat and transfer to a large slow cooker.Next, prepare your vegetables.

Cut up two carrots, two celery stalks, one white onion, a bell pepper, and two to three small zucchinis. So many delicious fresh vegetables! A can of diced tomatoes and cannellini beans are then added to improve the flavor and protein levels. We’re looking for a well-balanced supper in one dish.Add four cups of chicken or veggie broth and thoroughly season the soup.

Stir everything together, then cover and set the crockpot to high for 4-5 hours or low for 6-8. Take a step back and allow all of those delicious tastes cook together while you go about your day. When your Italian Summer Soup is finished, serve it hot with a liberal sprinkle of parmesan cheese and a few additional red pepper flakes for heat. Take advantage of all the fresh summer veggies and try this simple dish!
