You’ve probably heard of Marry Me Chicken, but what about Marry Me White Beans? If you’re not familiar, the “Marry Me” sauce is a basic Tuscan-style cream sauce made with sun-dried tomatoes. This recipe has been popular on the internet for years due to its excellent taste. I’ve been on a white bean binge lately, so I decided to match this famous sauce with my favorite legume, and the results were delicious.

The beautiful thing about this dish is that it all comes together on the stovetop in a single skillet. Begin by cutting around five cloves of garlic and a handful of sundried tomatoes. Heat a couple pats of butter in a skillet, then add the garlic and spices. Once they’re nice and fragrant, add the tomatoes, vegetarian broth, and two cans of white beans. Allow the mixture to simmer for about five minutes before adding a handful of spinach and 1/2 cup of half and half.

Once the spinach has wilted, sprinkle with fresh basil and serve. This meal is fantastic with a crusty baguette or over a large bowl of spaghetti; there is no wrong way to eat it.
