French Butter Cake

If you’re looking for a simple sweet treat, I have the perfect recipe for you. This French Butter Cake is quick, simple, and absolutely delicious. I would characterize it as a cross between coffee cake and pound cake, something we never knew we needed but are overjoyed to have in our lives. It’s buttery (of course), just sweet enough, and has a soft crumb that melts in your tongue. Best of all, it’s created with ingredients you probably already have on hand, making it a great last-minute treat when a sweet tooth strikes.

As you may expect, the butter is what really makes this cake stand out! A full cup of it. First, totally melt the butter and then cream it with a cup of granulated sugar. Mix for at least one minute to include lots of air into the batter, resulting in a light and soft final product. Next, add the eggs one at a time, followed by a good couple teaspoons of vanilla extract. Slowly mix in the dry ingredients until just mixed (overmixing can result in a tough texture!), then fold in the sour cream for a little tang.

Smooth the batter into a prepared baking dish, sprinkle with sugar, and bake for a little more than 30 minutes. There’s no wrong way to serve it, whether with fresh berries or with your morning coffee. A cake this delicious doesn’t require frosting!
