Humpty Dumpty Dip

If you enjoy deviled eggs but dislike the hassle of making them (all that precision and piping!), this dip will be a new favorite. Our Humpty Dumpty Dip combines all of the popular flavors of deviled eggs into a creamy, scoopable dip. It turns out that Humpty Dumpty does not need to be put back together! Skip the tiresome preparation and try this simple dip. We begin with a dozen hard-boiled eggs, half of which are set aside and the other half added to your food processor.

Slice the reserved eggs in half and separate the yolks and whites. Place the yolks in the food processor, and chop the remaining egg whites into small pieces. These will provide some texture to the finished dip. Combine the cream cheese, mayonnaise, mustard, and a dash of white vinegar for tang. A dab of paprika, salt, pepper, and a pinch of cayenne will bring out the typical deviled egg flavor.

After the foundation is smooth, fold in the chopped egg whites by hand. This gives the dip a wonderful texture—light and creamy, with small nibbles of egg throughout. A sprinkle of fresh chives on top provides color, while a coating of paprika creates the typical deviled egg look. Whether you’re entertaining a crowd or simply want a deviled egg fix without the bother, this dip has you covered. Just be warned: once you’ve made it, you may never return to the original.
