Za’atar Flatbread (Manakish)

I’ve got a bread recipe for you if you like cheesy herby light and fluffy savory bread. This is one of my favorite bread recipes. Manakish is a type of Middle Eastern pizza that consists of a flatbread covered with cheese and savory herbs. The savory blend we’re using here is called Za’atar, and it’s a tasty blend of herbs and seasonings that often includes sea salt, oregano, thyme, and sesame seeds. I’m using feta cheese here because its savory, tangy sweetness pairs nicely with this herbaceous spice blend.

Baking bread is one of my favorite activities. Breadmaking can be intimidating at first, but after you learn a few skills, it becomes a pleasantly satisfying endeavor. Yes, this is a bit of an exaggeration, but I believe you’ll understand the emphasis once you’ve experienced Za’atar flatbread. Here, I like to employ a basic scallion pancake approach, which is a fairly straightforward method for making this type of bread. A bread dough that is made into balls, flattened, then sprinkled with my seasonings and feta cheese before being twisted into a snake-like tube, coiled as a snake, and pan-fried to obtain a lovely golden brown hue.

This bread is all about layers, and the end result is a light, tasty bread to go with one of my favorite grilled meats, which in this case is Kofta lamb skewers. If you like naan bread, you’ll love what’s going on with this homemade manakish. This Za’atar flatbread is light, fresh, flavorful, and cheesy all at the same time, which is an impressive feat for such a simple flatbread. This recipe is equally suitable for entertaining as it is for a quick snack.

This flatbread is perfect for dipping into a sauce, such as the labneh that goes with the roasted carrots in this complete meal, and especially with the exquisite lamb skewers that I’ve also paired with this flatbread.
