No-Cook Coconut Pie

When you want dessert, you don’t always want to cook it, you know what I mean? Perhaps the kitchen is too hot, perhaps it appears to be too much labor, or perhaps you simply cannot be bothered to turn on the oven. This No-Cook Coconut Pie is the perfect dessert for those occasions. You don’t even need an oven; all you need are six ingredients, a bowl, a whisk, and a place to chill it. (Honestly, the only difficult thing here is waiting to dive into this creamy coconut treat.)

There is no pastry to make or dough to stretch out because this employs a store-bought graham cracker crust pie shell. Simply unwrap the packaging and begin constructing! The “assembly” is just combining milk, vanilla pudding mixes, and coconut essence. If you can locate it, you can replace the vanilla with coconut pudding mix and omit the coconut extract. (And then there’s one less ingredient!).Fold in some shredded coconut and whipped topping before spreading it throughout the pie.

That’s all! All that remains is to relax. Which is difficult to remain patient for, but it’s just one hour… There’s no need to be patient enough for anything to build up overnight or subject yourself to any other type of pain.

I prefer to end with a sprinkle of toasted coconut. It’s not necessary, and it’s a little extra labor, but it offers a wonderful texture contrast and some nice nutty taste. This is a delightful chilled and creamy pie that couldn’t be easier to make.
