Shoepeg Casserole

We can’t get enough of creamy casseroles. When you’ve had a long day and are in need of some comfort food, this recipe is sure to do the trick. If you can’t receive a hug from Mom, this dish is a close second. Warm and salty, it’s quick to make after work and sure to please everyone who tries it. If you’ve never tasted Shoepeg Casserole before, you’re in for a treat!Shoepeg casserole is named after the can of shoepeg corn, but if you can’t find it at your local grocery store, a can of white corn will suffice.

The rest of the ingredients are standard casserole fare, and you’ll top it all with crushed crackers and butter (that bit of crunch might be our favorite part!). Bake it for 45 minutes before digging into a warm bowl of comfort.

This casserole is generally served as a side dish, but by adding some shredded chicken or turkey, it may easily be transformed into a main dish. Many of my family enjoy adding a dash of spicy sauce to their meal for an extra kick. If you enjoy spicy foods, I definitely recommend giving that a try.
