Swiss Medley Casserole

Few side dishes are more traditional than the Swiss Veggie Medley. Many cooks claim to have gotten the recipe from a can of fried onions in the 1980s and have been cooking it ever since. With its rather outdated usage of condensed cream of mushroom soup and frozen vegetables, it’s simple to picture, but there’s no disputing that it’s tasty!

Today we have a somewhat different take on the classic dish. Most of the typical ingredients are present, save for a layer of crushed Ritz crackers on top. As much as we enjoy fried onions, they can overpower a dish’s flavor.

The substitution of crackers retains the salty, crunchy flavor while allowing the other ingredients to shine. You’ll have to tell us which version you prefer! This side dish is a fantastic choice for a variety of meals. It goes well with almost anything, from pasta to roasted chicken to pizza.

Classic recipes are frequently like this. Whether you’re revisiting a favorite recipe or trying it for the first time, it’s sure to satisfy your taste buds.
