Despite their unfavorable image, Brussels sprouts are one of our favorite vegetables. People’s dislike of the green veggie is usually attributed to a lack of knowledge about how tasty it can be – roasting is virtually the only way to go – and therefore not realizing how great it is, and we try to do our best to show everyone what a great ingredient it is.
We took some lightly roasted brussels (must get some color on them) and made a creamy, cheesy, savory gratin to show them off and let everyone fall in love with them…You should try it! The trick to this recipe is to roast your sprouts ahead of time.
Not only will your vegetables be absolutely tender by the time they’re cooked in the gratin and removed from the oven, but roasting them adds great flavor that kicks everything up a notch. Add crumbled bacon, cheese, and rosemary to the mix, and you’ve got yourself a show-stopping side dish. at least, such was the case during our supper!
