The Holiday Salad

Salads aren’t usually the star of holiday meals. This time of year, there are a lot of rich and creamy meals to choose from. How could a simple leafy green compete? The Holiday Salad is the answer. It tastes great and feels fresh because it’s full of seasonal foods like mandarin oranges and pomegranate seeds. It all comes together in a simple white wine dressing to make a salad that will really round out your holiday dinner plate.

You could use store-bought sauce if you needed to, but I thinkit’s worth the extra few minutes to make your own. White wine vinegar and olive oil are used as a base. Honey, Dijon mustard, garlic powder, salt, and pepper are then added to taste. The vinegar’s sourness is perfectly balanced by the honey, making the end dish bold and tasty.

Don’t dress your salad until right before you serve it. This will keep the greens nice and crunchy. I also like to add the feta cheese now so it stays fresh and gives the dish a new look. Mix everything well, and then eat! This is the salad that would look great on a holiday table.
