A good old-fashioned Reuben sandwich always hits the spot. Seriously, a grilled-to-perfection, a gooey sandwich can fix almost anything. But making one can be a pain, so we came up with a Reuben dish as an easier way to make a lot of them and feed a lot of people. This dish tasted just like our favorite hot sandwich, but we didn’t have to stand over a hot stove to make it.
It’s made with rye bread cubes, sauerkraut, pickles, Thousand Island dressing, and your choice of pastrami or corned beef. When you have guests over again, make this dish and stand back. Everyone will love it Warm the oven up to 350o F and use butter or non-stick spray to lightly coat a 9×11-inch baking dish. Cut four pieces of rye bread into cubes. Put the rest of the bread into the food processor and pulse it a few times to make fine breadcrumbs.
Set these aside. Line the bottom of your baking dish with cubes of bread. Then, put half of the pastrami on top of the bread. Put 2 cups of cheese, pickles, half of the caraway seeds, and cabbage on top of the beef. Add the rest of the beef, caraway seeds, and cheese on top.
Mix the milk, salad dressing, and mustard in a medium bowl with a whisk. Then add the eggs and beat until everything is well mixed. Spread the wet ingredients out evenly over the dish, and then sprinkle breadcrumbs on top.In a baking dish, put the mixture. Bake for 40 to 45 minutes, or until the top is browned and the middle is set. Take it out of the oven and serve it hot.
