Cinnamon Apple Cake

Cinnamon and apple have a lovely little friendship, don’t they? They encourage each other in a way that only true friends can. And, while they are completely different things when separated, they form their own flavor entity: apple-cinnamon. The mere mention of the term conjures up images of snug, warm spices, and delicate, delicious apples. And that combination (with the addition of chopped walnuts for crunch) is ideal for flavoring a plain everyday cake like this one.

We define an “everyday” cake as one that comes together in one bowl, bakes in less than 15 minutes, and requires no frosting. You know, the kind that might easily pass as quick bread if baked in a loaf pan? That’s what it is. This versatile dish can be baked in any pan and enjoyed as a snack, dessert, or even breakfast. It does not matter. We know it’s good!

This cake features a rich, delicate crumb with a powerful cinnamon taste. It’s not overflowing with apples – just enough to keep it moist and tasty – but make sure to cut them finely; large chunks aren’t ideal here. It is a straightforward cake. Simple to prepare, delicious to eat, and seasoned with a classic blend of sweetness and spice. It’s all lovely!
