Strawberry Butter

The abundance of fresh fruit has to be one of my favorite aspects about summer. There’s nothing better than a juicy peach, a generous serving of blueberries, or, in this case, sweet and tart strawberries. This simple Strawberry Butter comes together in minutes and perfectly captures the flavor of summer. Whether spread on toast, English muffins, or pancakes, this treat is sure to become a family favorite.

To begin, you’ll need a cup of salted butter, room temperature. Whip the butter for 2-3 minutes until light and airy. This allows it to absorb the berry flavor while remaining smooth and spreadable. Next, crush the strawberries until nearly pureed. This can also be done in a food processor with a few rapid pulses; just make sure not to overdo it!

Add the strawberries and a little powdered sugar to the beaten butter and stir well. Once it’s smooth, transfer it to a mason jar or airtight container and refrigerate to allow the flavors to meld–I recommend waiting about a day for a stronger strawberry flavor. Enjoy it as a breakfast treat or a noon pick-me-up; whatever way you serve it, it will be a hit!
