In this situation, we required a large portion of potatoes, so what better way to prepare them than to place them on a baking pan and allow the oven to do the work? Make a spice mix with your preferred dry herbs, then add some butter – voilĂ ! Toss the potatoes with the herbed butter mixture, then bake them.
The idea is to let the tots cook undisturbed for a bit – though you can flip them if you like – before removing your sheet pan from the oven and adding the magic ingredient: chicken broth. That’s right, you’re going to add some liquid that will be absorbed and transform these potatoes into the most delectable, melt-in-your-mouth pieces you’ve ever had. It’s easy to see how they acquired their moniker!
We chose to broil ours at the end to achieve that wonderful crispy exterior while retaining the melty, creamy centers, but these are virtually impossible to mess up. They’re absolutely delicious, and the fact that we can serve a lot with this simple recipe is a huge bonus. You have plenty going on in your hectic day; don’t let some potatoes throw you off!
