Sauerkraut Caserole

To be honest, I didn’t like sauerkraut until recently. In fact, I was hesitant to try this recipe since I was afraid the sauerkraut would overshadow everything. However, this casserole contains plenty of beef and egg noodles, as well as a surprise element that ties everything together… brown sugar! This combination is incredibly great when paired with tomato soup and swiss cheese! The somewhat sweet, earthy flavor with just a trace of sharpness from the sauerkraut blew me away.

Then, grease and put aside a 913 pan. Combine the ground beef, onion, garlic powder, parsley, salt, and pepper in a large skillet. Brown the hamburger and heat until the onion is transparent.

Prepare the egg noodles according to the package instructions. While the noodles are cooking, rinse the sauerkraut and place it in the preheated pan. Brown sugar can be sprinkled on top. Pour the drained (but not rinsed) egg noodles over the sauerkraut and brown sugar layer, then the hamburger mixture.Then, in another bowl, combine 1 can of warm water and 2 cans of tomato soup.

Stir until completely smooth. Pour over the hamburger mixture, spreading the soup into the pan’s corners. Serve with cheese on top. Bake for 30-45 minutes, or until the cheese is browned and the edges are bubbling, at 350°. Allow to stand for 5 minutes before serving.
