The whole point of a casserole is that it serves as a whole meal in itself, right? One casserole in which everything bakes together in less than an hour, and you’re done! While we enjoy a typical meatloaf, we decided to cut some corners and create a classic dish in an unusual method. Cheesy mashed potatoes and meatloaf casserole!
You’ll make a ground beef, onion, and breadcrumb mixture with egg, brown sugar, and Worcestershire sauce – all the classic meatloaf flavors – and then spread leftover (or store-bought) mashed potatoes on top of the beef mixture. Finish with cheese and bake for a satisfying meal that will leave your family wanting more.This was true for our household.
This recipe tastes fantastic, but perhaps what we like best about it is that there is no need to bother with inverting a meatloaf out of a very hot loaf pan. We don’t know how we keep forgetting this, but heed our advice: while making a standard meatloaf, leave out the loaf pan; better yet, skip it entirely and create this loaded meatloaf casserole instead – you won’t be sorry!
