No-Boil Slow Cooker Lasagna

I enjoy lasagna, but I dislike boiling lasagna noodles. It’s laborious, they always cling together, and to be honest, I prefer to avoid unnecessary processes wherever possible. So, while I often bake my lasagna in the oven (like one would), it is usually a no-boil recipe. Even so, lasagna is still more of a weekend job for me; it takes so long that I don’t make it on weeknights, when my free time is limited.

But it turns out you can prepare lasagna in your slow cooker without cooking the noodles. It’s a lasagna situation where you stack things up, close the lid, press a button, and walk away, so your slow cooker can do the work while you take your kids to soccer practice.

To begin, you will need two jars of marinara sauce. While you could probably add some meat to this, we’re going for speed and simplicity, so canned sauce will suffice. Layer some ingredients in the bottom of your slow cooker, just as you would in a baking pan.

The first layer will be your lasagna noodles. Purchase a no-boil variety—I prefer the flat sheets made by Barilla, but any will do. To make an even layer, break up the noodles and cover with a layer of ricotta mixture. Add another layer of noodles and marinara.Repeat these layers twice more, and then top with mozzarella.Then place the lid on your slow cooker, hit a few buttons, and walk away.

There is no need to preheat the oven, worry about cheese clinging to the foil, or be concerned about timing. This can cook while you’re at work, conduct errands, or chauffeur your children.You give up some texture for convenience here — the noodles are softer than the baked variety — but we all need a little convenience from time to time. This weekday lasagna recipe is delicious, simple, and comforting. What else could you want?
